Parsnip Fries

We all know and love sweet potato fries, waffle cut fries, curly fries, garlic fries, and steak cut fries. But have you haver tried the parsnip fry? The parsnip is a sister to the carrot, so it's a root vegetable, but have no fear parsnip fries do not taste like roasted carrots. They are sweet, nutty, and oh so delicious. Roasted parsnip fries make the perfect fall and winter snack or side, and they will make your kitchen smell amazing!



Say hello to your new favorite vegetable!



Ingredients:

  • 2 parsnips, washed and scrubbed

  • 1 tablespoon olive or avocado oil

  • salt + pepper to tast

Instructions:

  1. Preheat oven to 400ºF.

  2. Wash and scrub parsnips. Dry off with a clean towel, then cut the ends off.

  3. To make the fries, cut each parsnip in half width-wise. See photo below.

  4. Then cut pieces in half length-wise. Repeat again. For the larger pieces, it may be better to cut them in thirds on the second time around.

  5. Add fries to a baking sheet and massage on oil and salt + pepper.

  6. IMPORTANT! Space out the fries so they are not touching. This will result in a crispier fry.

  7. Bake for 12-15 minutes. Then toss with a spatula or tongs, and bake for an additional 10-15 minutes. The less fries on your baking sheet, the faster they'll cook.

  8. Enjoy warm out of the oven because if we're being honest, they won't last 2 hours!
