Veggie Packed Turkey Burgers

These veggie packed turkey burgers are so customizable, and make the perfect addition to any summer BBQ, weekly meal prep, buddha bowls, and everything in between. I served mine on a sweet and crispy sweet potato "bun," but feel free to serve these patties however you like. I hope you enjoy!



Ingredients:

  • 1 pound ground turkey

  • 1/3 cup red onion, diced

  • 1/3 cup red bell pepper, diced

  • 1 large handful spinach, roughly chopped

  • 2 cloves garlic, minced

  • 1 tablespoon evoo or avocado oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon cumin

  • 1/2 teaspoon oregano

  • 1/4 teaspoon red chili flakes


Instructions:

  1. In a large bowl, add all your ingredients (except the meat) and toss together.

  2. Next, add in the turkey and gently combine with the veggie and spice mixture. Adding the meat last, will ensure that it doesn't get overworked and become tough.

  3. Form patties using 1/4 cup scoop.

  4. Place on a hot grill or grill pan and grill until cooked through (about 10 minutes on a grill pan).

  5. For sweet potato buns, wash sweet potatoes and slice into rounds. Coat with oil, salt, pepper, and garlic powder. Broil until they reached your desired doneness.
