Bursting Blueberry Cobbler

We just sprung forward, which means summer is almost upon us! When I think of summer, I think of fresh, sweet berries. That’s why my paleo blueberry cobbler recipe is going to be my summer favorite! It’s the perfect dessert to finish off a delicious summer barbecue or to bring to a warm summer picnic. Cobblers are so simple to make and ingredients are interchangeable, so if you’re not a fan of blueberries swap it out with your favorite fruit (apple, peach, etc.). Without further ado, here’s the recipe. I hope you enjoy it!



Bursting Blueberry Cobbler

  • 2 cups blueberries

  • 1 lemon juiced and zested

  • 1 tbs coconut sugar

  • 1 cup almond flour

  • 1/2 cup chopped walnuts (or sub nut of choice)

  • 1 tsp cinnamon

  • 1/8 tsp nutmeg

  • pinch of salt

  • 1/4 cup coconut oil

  • 2 tbs honey (or sub maple syrup)


Instructions:

  1. Preheat oven to 375ºF.

  2. In a baking dish, mix together blueberries, lemon zest and juice, and coconut sugar.

  3. In a bowl combine almond flour, walnuts, cinnamon, nutmeg, salt, coconut oil, and honey to make the topping.

  4. Add the topping over the blueberry mixture.

  5. Bake for 25-30 minutes until bubbly.

  6. Let cool slightly, add your favorite dairy free ice cream, and enjoy!
