Oatmeal Raisin Chocolate Chip Cookies

Oatmeal raisin chocolate chip cookies aka an ode to my childhood. I know, you’re probably wondering why on earth oatmeal raisin chocolate chip cookies were my favorite as a kid were. Well, let me tell you.


Every time I think of oatmeal cookies, I am instantly taken aback to memories of my sweet Grandma Grace. She has always loved to bake for other people, but especially her grandkids. Each summer from the time I was 10 to 16 we would go on a family camping trip in Lake Tahoe, and each camper would get a bag of homemade oatmeal raisin chocolate chip cookies! At the end of a fun day in the sun we’d all sit around the warm fire bundled up in blankets eating cookies. They were the absolute best and made every camping trip so much sweeter.


So, when I had to go gluten and dairy free, I knew I had to find a way to recreate my grandma’s cookies, and I’m so excited to share the recipe I came up with!




Oatmeal Raisin Chocolate Chip Cookies:

  • 1 egg

  • ¼ cup almond butter

  • 3 tablespoons melted coconut oil

  • ¼ cup maple syrup

  • 1 tsp vanilla extract

  • 1 cup gluten free oats

  • 2 tbs ground flax seed

  • ½ cup almond flour

  • ½ tsp cinnamon

  • ½ tsp baking soda

  • ½ tsp salt

  • ¼ cup raisins

  • ¼ cup chocolate chips

Instructions:

  1. Preheat oven to 350°F and line a baking tray.

  2. In a large bowl, whisk all the wet ingredients together.

  3. In a smaller bowl, whisk all the dry ingredients together.

  4. Add the dry mixture into the wet and fold in the raisins and chocolate chips.

  5. Bake for 11-12 minutes and enjoy!
