Gluten Free Cranberry Orange Bread

This is the most amazing cranberry orange bread I've ever eaten. I love having this next to my morning tea or coffee, or as an afternoon pick me up. If you're anything like me once 3:30pm rolls around I NEED SUGAR!! This loaf is perfectly moist, sweet, and fluffy. You would never know that it's gluten and dairy free. I am so obsessed and once you make this loaf, you'll be craving it all year long!



Zesty Cranberry Orange Bread


Wet Ingredients:

  • 3 eggs at room temperature

  • 1/4 cup honey (wildflower is my favorite)

  • 3 tablespoons of coconut oil, melted and cooled

  • 1/2 cup fresh orange juice (about 2 oranges)

  • 1 teaspoon vanilla extract

  • zest of 1 orange

Dry Ingredients:

  • 1 1/2 cups almond flour

  • 1/3 cup brown rice flour

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 3/4 - 1 cup Patience Fruit Co dried cranberries (or sub fresh)

Instructions:

  1. Preheat oven to 350ºF and line/grease a loaf tin.

  2. Whisk wet ingredients together in a large bowl.

  3. Sift and mix dry ingredients together in another bowl.

  4. Pour dry ingredients into the wet, gently mix together, and fold in the cranberries.

  5. Bake for 35-40 minutes.

  6. In the meantime make orange glaze by combining 1/2 cup powdered sugar, 1-2 tablespoons of orange juice, and orange zest until your desired consistency is reached.
