Gluten Free Cranberry Orange Bread

This is the most amazing cranberry orange bread I've ever eaten. I love having this next to my morning tea or coffee, or as an afternoon pick me up. If you're anything like me once 3:30pm rolls around I NEED SUGAR!! This loaf is perfectly moist, sweet, and fluffy. You would never know that it's gluten and dairy free. I am so obsessed and once you make this loaf, you'll be craving it all year long!

Zesty Cranberry Orange Bread
Wet Ingredients:
3 eggs at room temperature
1/4 cup honey (wildflower is my favorite)
3 tablespoons of coconut oil, melted and cooled
1/2 cup fresh orange juice (about 2 oranges)
1 teaspoon vanilla extract
zest of 1 orange
Dry Ingredients:
1 1/2 cups almond flour
1/3 cup brown rice flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
3/4 - 1 cup Patience Fruit Co dried cranberries (or sub fresh)
Instructions:
Preheat oven to 350ºF and line/grease a loaf tin.
Whisk wet ingredients together in a large bowl.
Sift and mix dry ingredients together in another bowl.
Pour dry ingredients into the wet, gently mix together, and fold in the cranberries.
Bake for 35-40 minutes.
In the meantime make orange glaze by combining 1/2 cup powdered sugar, 1-2 tablespoons of orange juice, and orange zest until your desired consistency is reached.
