Does anything get better than a loaf of fluffy and sweet banana bread?


As I am sure you all saw, 2020 was the year of banana bread. Because of the pandemic most of us found ourselves stuck at home with extra time on our hands, and let’s be honest, a few overripe bananas from all the green smoothies we said we were going to make. I’ll be the first to admit that all the extra time at home made me crave my favorite comfort foods, desserts, and lots of chocolate.


But have no fear because this is the best and healthiest banana bread you will ever make :) It may lack gluten, dairy, and refined sugar, but it does not lack flavor. So, no need to say farewell to health goals, because this perfect loaf will keep you on track while satisfying your cravings. I hope you enjoy!


The Best Banana Bread (GF/DF/RSF)

  • 2-3 bananas, mashed

  • 2 eggs

  • ¼ cup avocado oil (or sub coconut)

  • ¼ cup maple syrup (or sub honey)

  • 1 tsp vanilla extract

  • 2 cups almond flour

  • ½ cup tapioca flour (or sub arrowroot)

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • ¼ tsp salt

Instructions:

  1. Preheat oven to 350°F and line/grease a loaf tin.

  2. Use a fork to mash the bananas in a large bowl, then mix in the remaining wet ingredients.

  3. Add in the dry ingredients and stir to combine.

  4. Fold in any add ins. I love adding chopped walnuts and chocolate chips!

  5. Transfer the batter to the prepared loaf tin and bake for about 40 minutes. Every oven is a little different, so watch the bread closely and use your best judgement.

  6. Let cool slightly, cut yourself a thick slice, sit back with your feet up, and enjoy!!
